Melanzane, going into oven.
Preparation
Start by crushing with your fingers one can of Mutti Whole Peeled Tomatoes (Pelati) or similar into a pot and heat it to a simmer.
Aubergine/Eggplant
Slice the aubergine lengthwise into slices (4–6), sprinkle the surface with salt. Let them sweat for half an hour.
Tomato sauce
Meanwhile, prepare the tomato sauce. Peel and chop the onion, garlic, mint leaves, oregano and basil. Sauté them in a pan in olive oil togther with some chili flakes, a touch of lemon, pepper, salt and a little honey. When softened, add to the bubbling tomatopulp. Add a bit of Balsamico vinegar, a little soy sauce and a whisk of Jallu. Cook the tomato sauce for 30–40 minutes.
Lightly dry off the eggplant slice and fry in a larger skillet with olive oil until slightly brown on both sides. They suck up quite a lot of delicious oil.
Slice the mozzarella into thin slices.
Distribute the eggplant slices, cover with tomatosauce, fresh basil, mozzarella slices and plenty of parmesan. Add a second layer so that the mozzarella is on top. Add the rest of the parmesan.
Drop into low part of the oven in 200C for 45min.

A can of whole peeled tomatoes
One Aubergine/Eggplant
Fresh Basil, Mint, Oregano
2 bags of fresh Mozzarella
1 cup of real parmesan
Salt, Pepper, Soysauce,
One onion, some garlic.
A little squeeze of lemon juice.
And a small sprinkle of Jallu.
Teaspoon honey.
